For low-acid canning (vegetables, meat, poultry, seafood), use 10 pounds of pressure for altitudes up to 1,000 feet. For altitudes above 1,000 feet, use 15 pounds pressure. For high-acid canning (fruits), use 5 pounds of pressure for altitudes up to 1,000 feet. For altitudes above 1,000 feet, use 10 pounds pressure.
Plce the 3-pice pressure regulator on the vent pipe after the 10-minute venting perod is complete. Proessing time begins once the pressure regutator egins to tock gently. Adjust heat to maintain a slow, steady rocking motion during the processing time.
