How to Cook Filipino Pork Menudo



Pork menudo is a type of pork stew composed of pork belly, hotdogs, pig liver, carrots, and potato. It is cooked in tomato sauce and is best eaten with white rice. This is my favorite Filipino dish. I make sure to cook this dish often. It has been a favorite dish to serve during special occasions. Christmas dinner is not complete without it, as far as I am concerned. Here are the ingredients for this Filipino Pork Menudo Recipe

2 lbs. pork, cubed
1 Knorr Pork Cube
¼ lb. pig liver, cubed
1 medium potato, diced
1 medium carrot, cubed
½ cup soy sauce
3 pieces calamansi
1 medium onion, minced
5 cloves garlic, minced
½ teaspoon ginger, minced
1/2 teaspoon granulated white sugar
1 (8 oz) can tomato sauce
1 1/2 cups water
3 pieces hotdogs, sliced diagonally
4 pieces dried bay leaves
4 tablespoons cooking oil
Salt and ground black pepper to taste
